Cornucopia!

As a vegetarian*, I am often asked what my family eats at Holidays. Well, what would you eat if you didn’t have meat? That’s right, anything else on earth. For our family, it varies widely. This year, my sister made an absolutely delicious roasted vegetable cornucopia. This dish was featured on the cover to vegetarian times this season and even though it’s a lot of work, it was worth it in the end! The plate was so gorgeous, and the project so involved, I couldn’t resist a few pictures. Incidentally, my dad recently completed the renovation of my parent’s kitchen–he built all of the cabinets himself!
Strips of puff pastry are wrapped around foil molds.
and egg wash is applied
Bake for 25 mins
Fill and enjoy!
In knitting news, I managed to confuse myself during a cable row on Crumpets and am hoping that a fresh look today will help me sort it out so I don’t have to rip.
*alright, I’ve been known to eat a little fish. nothing land locked though.

Those look delicious! Much better than all the heavy creamy vegetable dishes served at my families holiday. Next year I’m thinking of volunteering to bring some nice plain steamed broccoli!
(I’m not vegetarian either but I do try to eat more vegetables than meats.)

These are beautiful cornucopias!!! I ate a vegetarian diet for 9 years (now I eat chicken/fish/pork, but no red meat), and never really missed the meat on the holidays. I still tend to eat mainly the vegetable side dishes, and just a nibble of the turkey or ham.
Good luck solving hte Crumpet dilemma in the light of day …
